Hi ya’ll! I’ve made a lot of dietary changes since my heart attack in order to eat healthier and help lower my cholesterol and reduce my sodium intake. I’m doing pretty well maintaining those changes, but there are a few foods that I’m not likely to budge much on. Doesn’t mean I’ll eat them every day – but it does mean that I’ll whip them up now and again when I get a craving. Today, I want to share what, in my opinion, is the most perfect food of all – lasagna. More specifically, my easy no-boil lasagna.

Listen, there are thousands of ways to prepare lasagna and most of them are pretty great. What’s not to like – pasta, cheese, sauce? Mmmmm! I have multiple recipes that I’ve tried and never used again. I have those long, drawn-out recipes that I pull out every so often. And, I have my easy no-boil lasagna that I use pretty often – it’s my go-to lasagna recipe, for sure.

As you might have guessed, the great thing about my easy no-boil lasagna is there is no need to boil the noodles first. How easy and painless is that?

Make Your Easy No Boil Lasagna Saucy

Start by browning your sausage (you can certainly use ground beef, ground turkey or even a combination), but we prefer the spicy ground sausage in my house. Drain the excess grease and add in two jars of bottled tomato sauce. We typically use Hunts Garlic and Herb, but whatever you prefer is great. Because of my sodium restrictions, I’ve taken to picking up a lot of low sodium products.

Make Your Lasagna Cheesy

In a large bowl, combine ricotta cheese, mozzerella cheese and Italian seasoning. Sometimes I’ll toss in a little Parmesan if I have on hand, but if not, don’t worry about it. It will be plenty cheesy enough.

Make Your Easy No Boil Lasagna with Lots of Layers

In a 9×11 baking dish, layer your ingredients. Start by spreading a thin layer of the sauce mixture along the bottom. Top with your uncooked noodles (I usually go 3 across) and spread a layer of the ricotta mixture along the noodles. Repeat layers.

Top with extra mozzerella or parmesan before baking.

Bake Your Easy No Boil Lasagna

Cover and bake at 350 for about an 75-90 minutes or until a knife goes through the noodles and the noodles are completely cooked. Remove from oven and let sit for at least 10 minutes before cutting.

Personally, I’m a big pasta lover and could eat some form of pasta every single day. Add a nice green salad, some garlic bread and some good friends around the table. Methinks that’s about perfection.

Ingredients

  • 2 lbs ground sausage
  • 2 jars prepared spaghetti sauce
  • 1 box oven ready lasagna
  • 1 30 oz ricotta cheese
  • 1 16 oz mozzerella cheese
  • 2 tbsp italian seasoning
  • 2 tbsp garlic

Instructions

  • Combine sausage and garlic and cook through. Drain, as needed.
  • Mix tomato sauce into meat mixture and set aside.
  • In separate bowl, mix together ricotta cheese, mozerella cheese and Italian seasoning in large bowl.
  • In 9×11 baking dish, spread a layer of the meat sauce along bottom of pan. Lay 3 uncooked lasagna noodles across the bottom and top with ricotta cheese. Continue layering in this manner until you use all noodles in the box.
  • Bake at 350 for approximately 75-90 minutes or until knife inserts easily into lasagna noodles.
  • Let sit at least 10 minutes before cutting.

Notes

  • For ease of preparation, make this the day before and cover and refrigerate.  Let sit out for an hour before baking.
  • Feel free to add mushrooms or onions, as well.
